Grill Healthy: Five Tips for Better Grilling

Spring is here – which means it’s time to dust off the propane grill for another outdoor cooking season. But before you do, we wanted to talk a bit about grilling and your health.

Grilling is certainly a delicious way to prepare food, but just like any other cooking method there are healthier ways to do it than others. The key health challenge with grilling is to reduce the formation of Heterocyclic Amines (HCA) and Polycyclic Aromatic Hydrocarbons (PAH) – chemicals that in high enough doses could cause cancer.

But worry not, grill fans! You can eliminate virtually all the risks associated with these substances by taking some simple precautions.

Here are five keys to healthy grilling:

  1. Choose lean meats – PAHs and HCAs form mostly as a result of high fat foods coming into contact with intense heat and flame. Put a lean cut of beef or pork, or skinless chicken onto the grill and you’re off to a healthy start.
  2. Marinate! – Marinades taste great, but they also can virtually eliminate the formation of HCAs! Here are some guidelines:
    • Use olive oil – one of the strongest anti-HCA agents – along with herbs of the lamiaceae family (basil, mint, rosemary, thyme, oregano, and sage).
    • Marinate meats and poultry for at least 1-2 hours, fish and vegetables for about an hour.
  3. Choose smaller cuts – Smaller cuts cook faster, so they spend less time on the grill. Skewers are a great way to incorporate smaller cuts to your outdoor cooking.
  4. Turn food often – Frequent food flipping reduces HCA formation, according to recent reports.
  5. Eat more grilled fruits and vegetables – PAHs and HCAs don’t form on grilled fruits and vegetables. Asparagus, tomatoes, eggplant, onions, bell peppers, zucchini, pineapple, cantaloupe, and even apples are all great for grilling.
